What's Cooking

So I mentioned that it's been an off week and that is a little bit reflected in our eating habits this week, but I am keeping up with my promise to post despite the week...  Part of life!

Sunday: Leftovers from the weekend

Monday: Quail in Wine

I posted this recipe back in January, and it is fabulous.  We don't eat a lot of game in our house, but every time we do, I also ask myself why we don't eat it any more!  It is so delicious and such a great lean protein.

Tuesday:  Ina's Roasted Shrimp, Risotto, Roasted Veggies

Full disclosure: my mom cooked this when I was home in Beaufort... but it is worth sharing because my girl Ina came through with another winner by roasting the shrimp.  So simple: 400 degrees, shrimp, evoo, salt and pepper, 8- 10 minutes. . .  It is fabulous- maybe my new favorite way to cook shrimp!  And who doesn't love a clean up of just throwing away foil?!

Wednesday: Leftovers


I'm an admitted snob about LO's and typically hate them... but sometimes the ease and convenience wins, especially on a night where I'm coming in from out of town.

Thursday: Homemade pizza

I went to Happy Hour last night at Triangle, and when I got home, I was starving.  I let my hunger get the best of me and didn't pre-bake the dough a little bit so I feel like I had to cook it forever to get it golden brown. The pizza was still really good- I used a dough from Trader Joe's and would definitely buy it again.

Next week, I'll be back with hopefully more fun things to share and include pictures.  I've started using Pinterest more and have "pinned" a lot of things I'm dying to recreate.

Until then, I'm off to DC!!!!!!
